Bran Griddle Cakes Recipe
- 1 1/4 c. sifted flour
- 3/4 tsp salt
- 2 tsp sugar
- 3 tsp baking pwdr
- 2 x egg yolks, well beaten
- 1 3/4 c. lowfat milk
- 1 c. post's bran flakes
- 1 Tbsp. butter, melted
- 2 x egg whites, stiffly beaten
- Sift flour once, measure, add in salt, sugar, and baking pwdr, and sift again.
- Combine egg yolks and lowfat milk.
- Add in to flour gradually, stirring only till smooth.
- Add in Post's Bran Flakes and butter.
- Mix in egg whites.
- Bakes on warm, well-greased griddle.
- Serve warm with Log Cabin Syrup.
- Makes 24 cakes.
