Fresh Pea Relish with Tuna Steak

  1. Preheat grill or broiler.
  2. Season tuna with salt and pepper, and brush with olive oil and place on the grill or under the broiler.
  3. Meanwhile, in a bowl toss together peas, shallots, peppers, mint, 2 teaspoons of extra-virgin olive oil, salt, pepper, and the juice of 1/2 of the orange.
  4. Flip the tuna steak.
  5. Toss greens with 1 tablespoon extra-virgin olive oil, and juice of the remaining 1/2 of orange.
  6. Adjust seasonings with salt and pepper.
  7. Make a mound of the seasoned greens in the middle of each serving plate.
  8. Place a serving of tuna steak on top of the greens.
  9. Top with a generous spoonful of the relish.
  10. Garnish with chopped parsley, if desired.
