Breast Of Chicken With Orange Sauce
- 1/2 c. finely chopped onion
- 1/2 c. grated carrot
- 1 Tbsp. grated orange rind
- 2 whole chicken breasts, split and skin removed
- 1 c. orange juice
- 1/2 c. dry white wine
- orange slices (for garnish)
- 1/2 c. chicken stock
- 1 tsp. grated ginger or 1/4 tsp. powdered ginger
- 2 Tbsp. cornstarch, dissolve in 2 Tbsp. water
- Place onion, carrot and orange rind in bottom of shallow baking pan.
- Arrange chicken breasts on top.
- Mix 1/2 cup orange juice and wine.
- Pour over chicken.
- Cover and bake in 350u0b0 oven for 45 minutes or until tender.
- Remove chicken and keep warm.
- In same pan chicken cooked in, combine stock, remaining orange juice, ginger, cornstarch and juices in pan.
- Heat until sauce thickens, stirring often.
- Pour over chicken.
- Garnish.
- Serves 4.
