Breast Of Chicken With Orange Sauce

  1. Place onion, carrot and orange rind in bottom of shallow baking pan.
  2. Arrange chicken breasts on top.
  3. Mix 1/2 cup orange juice and wine.
  4. Pour over chicken.
  5. Cover and bake in 350u0b0 oven for 45 minutes or until tender.
  6. Remove chicken and keep warm.
  7. In same pan chicken cooked in, combine stock, remaining orange juice, ginger, cornstarch and juices in pan.
  8. Heat until sauce thickens, stirring often.
  9. Pour over chicken.
  10. Garnish.
  11. Serves 4.
