Paris Snacks
- 1 pound top-quality beef, ground twice (see note)
- 4 tablespoons bread crumbs, soaked in 1/4 cup milk and drained
- 2 tablespoons capers, chopped fine
- 2 tablespoons sweet gherkins, chopped fine
- 4 tablespoons finely chopped cooked beets
- Salt to taste
- White pepper to taste
- 6 to 8 slices white bread
- Butter, about 1/2 cup
- Mix first 6 ingredients thoroughly by hand.
- Spread bread slices thickly with butter and fry on buttered side until golden brown.
- Remove from pan, spread fried side of slices thickly with meat mixture and fry, meat side first, for 1 to 2 minutes.
- Turn and brown on the other side.
