Go Bananas Healthy Cookies
- 1 12 large ripe bananas, mashed
- 12 teaspoon vanilla bean paste or 1 teaspoon vanilla extract
- 2 tablespoons coconut oil, warm (or olive oil)
- 1 cup rolled oats
- 13 cup almond meal (ground almonds)
- 3 tablespoons coconut, finely shredded, unsweetened
- 12 teaspoon cinnamon
- 14 tsp.fine-grain sea salt
- 12 teaspoon baking powder
- 13 cup vegan chocolate chips or 13 cup dark chocolate bar, chopped
- Preheat oven to 350F.
- In a large bowl, mash the bananas, and then mash in the vanilla and coconut oil; aside.
- In another bowl, whisk together the rolled oats, almond meal, shredded coconut, cinnamon, salt, chocolate and baking powder.
- Add the dry ingredients to the wet ingredients and stir until combined.
- The dough is very loose and does not hold together well, but don't worry about that.
- Take a couple teaspoons of teaspoons of the dough in your hand, and gently form a ball, and squeeze it together as much as you can.
- Place 1-inch apart on baking sheet.
- Bake for 14 minutes until bottoms are golden.
- Let cool for about 20 minutes to set.,.
