Meat and Potato Cupcakes #5FIX
- 1 lb extra lean ground turkey or 1 lb ground beef
- 1 cup beef gravy
- 14 cup seasoned bread crumbs
- 1 cup shredded mild cheddar cheese (divided)
- 24 ounces Simply Potatoes Traditional Mashed Potatoes
- Heat oven to 375F Place foil baking cup in each of 12 regular-size muffin cups.
- In large bowl, mix the meat, bread crumbs and 1/2 cup cheese.
- Press about 3 tablespoons meat mixture in each muffin cup.
- Spread about 2 teaspoons of gravy over each meat cupcake.
- Pipe or spoon the potatoes onto the cupcakes.
- Bake around 15 minutes or until meat thermometer inserted in center of cupcake reads 165 degrees if using turkey, or to desired doneness if using beef(140 degrees for medium).
- Sprinkle each cupcake with the remaining cheese and place under a broiler for 1-2 minutes to melt the cheese.
