Meat and Potato Cupcakes #5FIX

  1. Heat oven to 375F Place foil baking cup in each of 12 regular-size muffin cups.
  2. In large bowl, mix the meat, bread crumbs and 1/2 cup cheese.
  3. Press about 3 tablespoons meat mixture in each muffin cup.
  4. Spread about 2 teaspoons of gravy over each meat cupcake.
  5. Pipe or spoon the potatoes onto the cupcakes.
  6. Bake around 15 minutes or until meat thermometer inserted in center of cupcake reads 165 degrees if using turkey, or to desired doneness if using beef(140 degrees for medium).
  7. Sprinkle each cupcake with the remaining cheese and place under a broiler for 1-2 minutes to melt the cheese.
