Blue Cabbage Rolls
- 12 large cabbage leaves steamed
- 1 cup cornmeal blue
- 1/2 cup scallions, spring or green onions chopped
- 1/2 cup corn whole
- 1/4 teaspoon garlic powder
- 1/4 teaspoon thyme
- 1/4 teaspoon oregano
- 1 cup tomato sauce
- 2 cups water
- 1 cup cheese grated
- While steaming cabbage leaves, mix remaining ingredients except cheese in a sauce pan and stir with a wire whisk over medium heat until mixture is very thick.
- Be cautious to keep mixture stirred thoroughly.
- Roll 1 tablespoon mixture in each cabbage leaf.
- Place in baking dish and cover with cheese.
- Bake for 10 minutes at 300 F.
