Grilled Almond Butter and Berry Sandwiches
- 6 ounces fresh raspberries (1 1/2 cup)
- 14 cup raspberry spreadable fruit
- 8 slices whole grain bread or 8 slices whole grain cinnamon-swirl bread
- 12 cup creamy almond butter (MUFA)
- Mash fresh raspberries into raspberry spread in small bowl with fork.
- Spread 4 slices of the bread with 2 tablespoons each of the almond butter.
- Spread about 3 tablespoon each of the berry mixture over the almond butter and top with remaining bread slices.
- Lightly coat outsides of bread with cooking spray.
- Place sandwiches on large nonstick griddle or skillet over medium-low heat (in batches, if necessary).
- Cook 5-7 minutes, turning halfway through, to brown both sides.
- Cut each in half and serve.
