Southwest Turkey Sliders with Chipotle Mayo
- 2 cloves Garlic, Finely Minced
- 1 whole Large Shallot, Finely Chopped
- 1/2 whole Small Bell Pepper, Finely Chopped
- 1 whole Jalapeno Pepper, Finely Chopped
- 2 Tablespoons Chopped Fresh Thyme Leaves Or 1 Teaspoon Dried Thyme Leaves
- 2 Tablespoons Chopped Fresh Parsley
- 2 slices Bread With Crusts Removed
- 1/4 cups Milk
- 1-13 pound Ground Turkey, The Average Weight Of A Package
- 2 teaspoons Ground Cumin
- 1 teaspoon Tabasco Hot Sauce (more If You Like It Hotter)
- 1/4 teaspoons Salt And Pepper, Each
- 1 package Slider Rolls (12 Count)
- 12 slices Deli Sliced Pepper Jack Cheese
- 12 leaves Red Leaf Lettuce
- 1/2 whole Red Onion, Sliced Into Rings
- 1 cup Chipotle Mayo (recipe As Follows)
- 1/2 cups Mayonnaise
- 2 Tablespoons Sour Cream
- 1 whole Lime, Juiced
- 1 whole Canned Chipotle Pepper, Chopped
- 1 Tablespoon Chili Sauce
- 1/2 teaspoons Ground Cumin
- 1 Tablespoon Chopped Cilantro
- 1 pinch Salt And Pepper, to taste
- For the burgers: Chop your garlic and veggies.
- Soak the bread in the milk for a few minutes to allow absorption.
- Combine turkey meat, milk soaked bread, garlic, shallot or onion, thyme, parsley, bell pepper, jalapeno pepper, cumin, hot tobasco sauce, salt and pepper.
- Mix until well combined.
- Divide mixture into 12 equal amounts then form meat into patties.
- Cook in a skillet over medium high heat for 5 to 6 minutes on each side.
- While burgers are cooking toast buns and set aside.
- Place sliced cheese over the patties in the last 2 minutes of cooking, use 1 or 2 slices for each patty, as you like.
- Spread top of buns with chipotle mayo.
- Place cooked cheeseburgers into buns.
- Set red leaf lettuce on top of burgers with red onion.
- For the chipotle mayo: In a small bowl combine mayonnaise, sour cream, lime juice, chipotle, chili sauce, cumin, and cilantro, and season with salt and pepper
