Zucchini au Gratin
- 4 tbsp. butter
- margarine
- 4 cups thinly sliced zucchini
- summer squash
- 1 sm. onion, thinly sliced
- 1 tsp. salt
- 1/8 tsp. pepper
- 2 sm. tomatoes, peeled and cut up
- 1/2 cup shredded sharp Cheddar cheese
- Melt butter in saucepan on low heat.
- Add rest of ingredients except cheese.
- Cover and cook on simmer until squash is tender, about 15 minutes, stirring occasionally.
- Add cheese and cover pan until cheese is melted.
- Serve without draining, as no liquid has been added.
