Minted Baby Carrots
- 6 bunch baby carrots
- 1/4 c. mint jelly
- 2 tbsp. margarine or butter
- Peel carrots from bunches baby carrots.
- In 4-quart saucepan over medium heat, in 3/4 inch boiling water, heat carrots to boiling.
- Reduce heat to low; cover and simmer 8 to 10 minutes until carrots are tender.
- Drain liquid from carrots.
- Stir in mint jelly and margarine or butter.
- Over medium heat, cook, stirring gently, until jelly and margarine melt.
