Minted Baby Carrots

  1. Peel carrots from bunches baby carrots.
  2. In 4-quart saucepan over medium heat, in 3/4 inch boiling water, heat carrots to boiling.
  3. Reduce heat to low; cover and simmer 8 to 10 minutes until carrots are tender.
  4. Drain liquid from carrots.
  5. Stir in mint jelly and margarine or butter.
  6. Over medium heat, cook, stirring gently, until jelly and margarine melt.
