Sweet and Spicy Soft Tacos
- 2 cups left over pot roast (shredded)
- 14-12 cup barbecue sauce
- 1 -2 chipotle chile in adobo, chopped (you can omit the seeds if you want)
- 2 tablespoons adobo sauce
- 12 cup orange marmalade
- 14 cup honey
- corn or flour tortilla
- queso fresco or monterey jack cheese or your favorite cheese
- lettuce
- tomatoes
- onion
- cilantro, chopped
- Mix barbecue sauce and 1/2 chipotle pepper (if you like it spicy add the whole pepper), heat over low heat.
- Add shredded roast, and simmer (you may need to add just a little water).
- In small bowl combine the other 1/2 to 1 whole chipotle, adobo sauce, orange marmalade and honey.
- Heat in microwave.
- Spoon a couple tablespoons of meat mixture in tortilla.
- Add cheese and drizzle with marmalade sauce.
- Heat for about 25 seconds in microwave.
- Top with lettuce, tomatoes, onion and cilantro if desired.
- I like mine with out any lettuce or tomatoes.
