Apple Sauce Oatmeal Chocolate Chip Cookies
- 6 tablespoons butter, unsalted
- 2 tablespoons canola oil or light olive oil
- 1/2 cup applesauce natural
- 1 1/4 cups brown sugar, dark packed
- 2 large eggs
- 1/2 tablespoon vanilla extract
- 1 cup whole wheat flour
- 1/4 cup flour, all-purpose
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/2 cups rolled oats
- 1 1/4 cups chocolate chips bitter or semi sweet
- 3/4 cup walnuts chopped
- Preheat the oven 325F (160C).
- In a large bowl with an electric mixer, add butter, canola oil, apple sauce, and brown sugar, beat until smooth.
- Beat eggs one at a time, stir in vanilla.
- In another bowl, add the flour, baking soda, and salt, and mix well.
- Add the flour mixture into the butter-applesauce mixture, stir until just incorporated.
- Stir in oats, chocolate chips, and walnuts.
- Drop by spoonfuls onto ungreased baking sheets.
- Bake for about 13 minutes.
- Let cookies cool on the baking sheet for a few minutes.
- Transfer the cookies onto wire racks and cool completely.
- Store in an air-tight container for up to 1 week.
