Gambetti Grigliati con Rosemarino -Grilled Rosemary Garlic Shrimp
- 1/4 cup finely chopped garlic, mashed to a paste with 1 tsp. coarse salt
- Zest of one lemon
- 2 tbsp. minced fresh rosemary
- any herb will work I like mint as well
- 3 tbsp. olive oil plus oil for brushing shrimp
- 1 to 2 dash red chile flakes
- 1 lb. jumbo shrimp U-20
- Lemon wedges as an accompaniment
- Salt
- In a large bowl stir together garlic, minced herb, lemon zest, and 3 tablespoons oil, red pepper flakes and add shrimp.
- Marinate shrimp, covered and chilled, for 30-60 minutes.
- Season the shrimp with salt and add the shrimp to the grill.
- Grill the shrimp 3 to 4 minutes on each side, or until just cooked through.
- Remove to a plater, drizzle with olive oil, and serve a lemon on the side.
