Healthy Peanut Butter Cookie Balls
- 1 cup peanuts
- 1 cup pitted dates
- 14 cup almond butter, crunchy and salted (I use Trader Joe's Almond Butter with Roasted Flaxseed)
- Put all ingredients into a blender or food processor and combine well.
- Shape into bite sized balls, or bars if you prefer.
- Can be eaten immediately, refrigerated or frozen depending on the desired texture.
