Helen's Cheese Rice

  1. In a medium saucepan over high heat, add rice, water, salt, and butter.
  2. Stir and bring to a boil.
  3. Reduce heat to simmer.
  4. Cover and let simmer for 15 minutes (do not open lid).
  5. After 15 minutes, turn off the heat and add the cheese slices.
  6. Give a quick stir and quickly cover the pot again.
  7. Let sit for 5 more minutes.
  8. Remove lid, stir well, and serve.
