Red and Green Salad

  1. Combine sweet peppers, cucumber, tomatoes, carrots and arugula in a medium-size bowl.
  2. Whisk together oil, vinegar, salt and pepper in a small bowl.
  3. Pour dressing over vegetables, tossing to coat.
  4. Serve chilled or at room temperature.
