Carrots and Beef II
- 3 large carrots
- 1 1/3 lb ground beef or your favorite ground meat
- 1 tbsp capers
- 1/2 small onion, diced
- 1 tbsp tomato paste
- 28 oz diced tomatoes
- 1 cup Castelvetrano olives remove pits
- 1/3 cup Spanish olives
- 1/2 tsp salt
- 1 tsp paprika
- 2/3 cup raisins
- 1/2 tsp granulated garlic powder
- 1/2 tsp ground cumin
- 1/4 tsp ground black pepper
- 1/2 cup shredded cheddar cheese
- 1 cup shredded fontina cheese
- Brown the meat.
- Dice onion and add.
- cut the carrots on a bias/diagonal, and add.
- Add salt, raisins, cumin, garlic, paprika, and pepper.
- Mix well add tomatoes.
- Simmer 20 minutes covered.
- Chop the olives check for pits.
- Add capers.
- Mix in the tomato paste.
- Simmer 7 minutes.
- Carrots should be fork tender but firm.
- Add cheese to top cover and remove from heat.
- Let sit 10 minutes.
- Serve.
