Carrots and Beef II

  1. Brown the meat.
  2. Dice onion and add.
  3. cut the carrots on a bias/diagonal, and add.
  4. Add salt, raisins, cumin, garlic, paprika, and pepper.
  5. Mix well add tomatoes.
  6. Simmer 20 minutes covered.
  7. Chop the olives check for pits.
  8. Add capers.
  9. Mix in the tomato paste.
  10. Simmer 7 minutes.
  11. Carrots should be fork tender but firm.
  12. Add cheese to top cover and remove from heat.
  13. Let sit 10 minutes.
  14. Serve.
