Cocoa Date Cookies (No Added/Refined Sugar)

  1. Preheat your oven to 350F.
  2. Spray a large baking sheet (or two small ones) with cooking spray.
  3. Mix together the flour through nuts.
  4. Set aside.
  5. In a blender combine the dates, the eggs, the water, and the vanilla.
  6. Mix until the dates are broken up and everything is combined.
  7. This might take a few minutes and you might need to use a spatula to mix it all up.
  8. Add the cocoa powder to the blender and mix again.
  9. It is ok if there are little date pieces.
  10. Pour the blender mix into the dry and mix well.
  11. It will be fairly stiff.
  12. Using two tablespoons, drop the cookies onto the sprayed cookie sheets.
  13. Bake for 10-14 minutes or until a toothpick inserted into a cookie comes out clean.
