Chicken My Way
- 1 tsp garlic paste
- 1/2 tsp hot paprika
- 1/4 tsp rock salt
- 2 bay leaves
- 1 tsp curry powder
- 8 chicken pieces
- 8 medium potatoes, peeled and cut in half
- 3 tbsp olive oil, extra virgin
- 1 large onion, chopped
- 2 garlic cloves, finely chopped
- 1 can of chopped tomatoes
- 500 ml chicken stock or broth
- 1 pinch of onion salt
- 1/4 tsp hot chilli powder
- 1 tsp curry powder
- 1 tbsp tomato paste
- 1/2 tsp black pepper
- 1/4 tsp ground cumin
- 1 tsp garam masala
- Using all the ingredients in the marinade section coat the chicken well and store in fridge until it's cooking time.
- Needs to be marinaded about 2 hours atleast before cooking.
- Heat the olive oil in a medium sized pan on a medium heat.
- Add the onion and garlic and cook until softened.
- About 3-4 minutes.
- Add the can of tomatoes, onion salt, curry powder, cumin, garam masala, chilli, black pepper and tomato.
- Simmer for 5 minutes.
- Next add in the chicken pieces and half of the stock and simmer for about 15 minutes.
- Add in the potatoes and the rest of the stock and simmer for another 25-30 minutes or until the potatoes are cooked.
- Add more water is its starting to dry.
- Check seasoning.
- Let it stand for 10 minutes once off the heat before serving.
