Walnut, Blue Cheese, And Apple Slaw
- 1/3 cup walnut pieces
- 1 medium sized apple
- 1 pepper to taste
- 1/4 cup pre-crumbled blue cheese
- 1/2 cup bottled ranch salad dressing
- 1 bag (16 ounces) coleslaw mix
- Preheat oven to 350F.
- Place the walnut pieces on a rimmed baking sheet and bake them until they begin to darken, 5 to 7 minutes.
- Meanwhile, coursely grate the apple using the side of a box grater with the largest holes.
- You should have about 1 cup.
- Place the ranch dressing and the blue cheese in a large serving bowl.
- Stir to combine and mash the blue cheese a bit to incorporate it into the dressing.
- Add the coleslaw mix and grated apple and stir to coat it well with the dressing.
- Season the slaw with black pepper to taste.
- Just before serving, sprinkle the toasted walnuts on top of the slaw.
