Apple Potato Cake Recipe

• 2 lrg Potato cakes -- (see
• 2 lrg Apples -- cooking apples
• 1 tsp Cinnamon
• 1 1/2 tsp Grnd cloves
• 2 Tbsp. Butter Lemon curd -- (see recipe)

1. Prepare potato cakes recipe.
2. Divide dough into 2 parts.
3. Roll out into 2 large circles.
4. Peel apples and slice thinly.
5. Layer apple slices on 1 circle of dough; cover with other.
6. Healthy pinch edges to seal.
7. On greased griddle, cook slowly over low heat, turning once.
8. When apples are cooked, remove top cake and sprinkle with sugar, cinnamon, grnd cloves and butter.
9. Replace top cake and heat 5 min longer.
10. Serve with lemon curd and warm tea.
