Rudies' Broccoli Rice Casserole Recipe
- 1 (10 ounce.) pkg. frzn minced broccoli
- 1/2 c. minced onion
- 1/2 c. minced celery
- 1 teaspoon butter
- 1 c. grated American cheese
- 1 (10 3/4 ounce.) can cream of chicken soup
- 1 1/2 c. cooked rice
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 tbsp. bread crumbs
- Cook broccoli according to package directions and drain well.
- Saute/fry onions and celery in butter.
- Mix broccoli, soup and cheese.
- Add in to celery and onions.
- Stir in rice, salt and pepper.
- Pour into a 1 1/2 qt casserole.
- Top with bread crumbs and bake in 350 degree oven for 45 min.
