Girl Scout Mint Cookie Pie

  1. Preheat oven to 325. degrees F.
  2. Roll cookies between two sheets of wax paper to make fine crumbs (can freeze cookies a few minutes for easy rolling).
  3. Beat egg whites and salt until stiff and glossy.
  4. Fold in crumbs; nuts and vanilla.
  5. Spread in buttered 8 inch pie plate.
  6. Bake for 35 minutes.
  7. Cool and refrigerate 3 hours.
  8. Cover with whipped cream and shaved chocolate.
