Japanese Style Matcha Cookies
- 120 grams Cake flour
- 6 grams Matcha
- 70 grams Unsalted butter
- 48 grams Sugar
- 1 Egg yolk
- 1 Milk (to finish)
- 1 White roasted sesame seeds (to finish)
- Combine the ingredients marked with a .
- Whip the butter, add sugar and blend, then stir in the egg yolk.
- Add match powder, blend until even, form thick bars, wrap in plastic wrap, and let sit in the freezer for over 1 hour.
- Cut into 5 mm thick slices and arrange on a parchment sheet set on an oven tray.
- Brush with milk and sprinkle with sesame seeds.
- Bake for 8 minutes at 170C.
- Transfer to a cooling rack and let cool.
