Cheddar-Studded Tex-Mex Meatloaf Patties, Scallion Smashed Potatoes, and Spicy Pan Gravy

  1. For the scallion smashed potatoes, cover the potatoes in water in a medium saucepan.
  2. Bring the water to a boil, add a little salt, and cook the potatoes for 10 minutes, or until fork tender.
  3. Mix the meatloaf patties as in the master recipe, #100.
  4. Form and cook as before.
  5. Check on the potatoes.
  6. When they are tender, turn off the heat under the pan; drain the potatoes and return to the hot pan and warm stovetop to dry the potatoes.
  7. Add 3 tablespoons of the butter, the sour cream, and the scallions to the potatoes and smash to the desired consistency.
  8. Season the potatoes with salt and pepper.
  9. Remove the meatloaf patties from the skillet and make the gravy as directed.
  10. Stir in the cilantro and lime juice, then remove the gravy from the heat.
  11. Slice the meatloaf patties and drizzle with gravy.
  12. Pile scallion smashed potatoes alongside.
