Nutty Pumpkin Spice Chipsters
- 12 cup unsalted butter, softened
- 12 cup granulated sugar
- 12 cup light brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 14 teaspoon almond extract
- 2 cups flour
- 2 teaspoons baking powder
- 14 teaspoon salt
- 1 teaspoon pumpkin spice
- 14 teaspoon cinnamon
- 12 cup semi-sweet chocolate chips
- 14 cup butterscotch chips
- 14 cup raisins
- 14 cup sliced almonds
- Preheat oven to 350F; line a cookie sheet with parchment paper or silicone mat.
- Using a stand mixer at medium speed, cream together the butter and sugars until light and fluffy.
- Scrape down the bowl and beat in the eggs, one at a time.
- Then mix in the vanilla and almond extracts.
- In a medium bowl, combine the flour, baking powder, salt and spices.
- Set the mixer speed to low, and gradually mix in the flour mixture until just incorporated.
- Then, fold in the chips, raisins and almonds.
- Scoop out dough into 1 to 1 1/2-in balls and set on prepared cookie sheet.
- Then use the back of a spoon to slightly flatten and shape the cookies.
- Bake in oven for 10-15 minutes.
- When done, cool completely on a wire rack.
