Beef Bruschetta Skillet
- 2 tsp. oil
- 1 lb. (450 g) boneless beef sirloin steak, cut into thin strips Whole Foods 1 lb For $7.99 thru 02/09
- 1 can (10 fl oz/284 mL) 25%-less-sodium beef broth
- 2 large tomatoes, chopped
- 4 cloves garlic, minced
- 1 tsp. dried basil leaves
- 1-1/3 cups instant white rice, uncooked
- 1/2 cup Cracker Barrel Shredded 4 Cheese Italiano Cheese
- Heat oil in large nonstick skillet on medium-high heat.
- Add meat; cook 2 to 3 min.
- or until evenly browned, stirring frequently.
- Remove meat from skillet; set aside.
- Add broth, tomatoes, garlic and basil to skillet; stir.
- Bring to boil.
- Stir in rice; return to boil.
- Stir in meat; top with cheese.
- Cover; simmer on medium-low heat 5 to 10 min.
- or until heated through.
