Manhattan Cod Chowder Recipe
- 4 slices bacon, cut 1 inch pcs
- 4 sm. onions, peeled, quartered and sliced
- 1 c. thinly sliced celery
- 2 lg. potatoes, pared and cubed (2 c.)
- 1 clove garlic, chopped
- 1 teaspoon dry thyme, crushed
- 1 teaspoon salt
- 1 (8 ounce.) bottle clam juice
- 1 c. water
- 1 (16 ounce.) pkg. frzn cod, thawed and cut 3/4 inch
- 1 c. (28 ounce.) tomatoes
- Saute/fry bacon till crisp, drain.
- Stir onions and celery into drippings; saute/fry till soft.
- Stir in potatoes, garlic, thyme, salt, clam juice and water.
- Heat to boiling.
- Cover.
- Simmer 10 min.
- Add in cod cubes, cover.
- Simmer 5 min.
- Stir in tomatoes and heat slowly.
- Simmer 5 min.
- Top with crisp bacon.
