Lotus Root Salt Kinpira For Obento
- 150 grams Lotus root
- 1 Red chili pepper (sliced)
- 1/2 tsp Japanese soup stock (granules)
- 1 tbsp Sake
- 1 tbsp Mirin
- 1 tsp Sugar
- 1/3 tsp Salt
- 1 dash Sesame oil
- 1 dash White toasted sesame seeds
- Peel the lotus root and slice into 2-4 pieces vertically.
- Soak in water with a little vinegar added in, changing the water once.
- Drain the water.
- Put the sesame oil in a frying pan and fry the red chili pepper on a low heat.
- Add the thinly sliced lotus root and fry on a high heat.
- Add the Japanese soup stock and ingredients, and continue to fry on a medium to high heat until the liquid evaporates.
- Transfer to a serving dish and sprinkle with white sesame seeds.
