Grilled Horse Mackerel with Rosemary and Garlic

  1. Remove the innards of horse mackerel, wash and drain.
  2. Make a cross cut on the skin and season with salt and pepper.
  3. Stuff the sliced garlic and rosemary into the fish.
  4. Pour on olive oil and lemon juice and cover.
  5. Leave the fish in the fridge for a half day.
  6. Coat the fish with flour, heat a pan with plenty of olive oil.
  7. Place the fish in the pan.
  8. Cook them on low to medium heat with lid on for about ten minutes.
  9. Turn over the fish when it's browned and crispy.
  10. Cook for another 5 minutes with lid on, then take off the lid and keep cooking on medium heat for a few more minutes.
  11. Season with salt if needed and enjoy!
