Grilled Horse Mackerel with Rosemary and Garlic
- 2 Horse mackerel
- 2 sprigs rosemary
- 1 clove garlic
- 2 tablespoons olive oil
- 1/2 lemon, juiced
- Remove the innards of horse mackerel, wash and drain.
- Make a cross cut on the skin and season with salt and pepper.
- Stuff the sliced garlic and rosemary into the fish.
- Pour on olive oil and lemon juice and cover.
- Leave the fish in the fridge for a half day.
- Coat the fish with flour, heat a pan with plenty of olive oil.
- Place the fish in the pan.
- Cook them on low to medium heat with lid on for about ten minutes.
- Turn over the fish when it's browned and crispy.
- Cook for another 5 minutes with lid on, then take off the lid and keep cooking on medium heat for a few more minutes.
- Season with salt if needed and enjoy!
