Buffalo Chicken Cucumber Boats
- 2 whole Boneless, Skinless Chicken Breasts
- 2 whole Cucumbers
- 4 ounces, weight Cream Cheese
- 1/4 cups Ranch Dressing
- 13 cups Frank's Red Hot (adjust To Taste)
- 4 ounces, weight Cheddar Cheese, Shredded
- Preheat oven to 400 degrees F.
- Cook the chicken for 25 minutes (or until done),.
- Let it cool for a few minutes, and shred it.
- While the chicken cooks, peel cucumbers if desired, cut them in half, and scoop out the seeds.
- Mix the shredded chicken, cream cheese, ranch dressing, and hot sauce in a large bowl until combined.
- Place the chicken mixture in a baking dish, top with the shredded cheese, and broil in the oven until the mixture is heated through and the cheese is melted.
- Scoop the chicken mixture into the cucumber halves and serve.
