Parlor's Fruit Sandwich
- 4 slice Sliced sandwich bread
- 1 Your favorite fruits
- 1 Salted butter (to spread on the bread)
- 100 grams Heavy cream
- 40 grams Yogurt
- 2 tbsp Sugar
- Cut the fruit and pat with paper towel to remove excess liquid.
- If you're worried about the color changing, sprinkle with a little lemon juice.
- Whisk the heavy cream and sugar until thick.
- Add the yogurt and whisk until soft peak stage.
- Spread melted butter on one side of the 4 slices of bread!
- It's easier to spread if melted.
- Spread the cream on top of the butter.
- Arrange the cut fruit on the bread while keeping in mind how you will be cutting the bread.
- This time, I used peaches, kiwi and canned mikan oranges.
- Top the fruit with the other slices of bread.
- Lightly press down and wrap tightly with cling film.
- Chill in the refrigerator until the entire sandwich is set.
- This takes about 1 hour.
- Cut the sandwich into your desired shape.
- It's easier to cut with a heated knife.
