Parlor's Fruit Sandwich

  1. Cut the fruit and pat with paper towel to remove excess liquid.
  2. If you're worried about the color changing, sprinkle with a little lemon juice.
  3. Whisk the heavy cream and sugar until thick.
  4. Add the yogurt and whisk until soft peak stage.
  5. Spread melted butter on one side of the 4 slices of bread!
  6. It's easier to spread if melted.
  7. Spread the cream on top of the butter.
  8. Arrange the cut fruit on the bread while keeping in mind how you will be cutting the bread.
  9. This time, I used peaches, kiwi and canned mikan oranges.
  10. Top the fruit with the other slices of bread.
  11. Lightly press down and wrap tightly with cling film.
  12. Chill in the refrigerator until the entire sandwich is set.
  13. This takes about 1 hour.
  14. Cut the sandwich into your desired shape.
  15. It's easier to cut with a heated knife.
