Baked Potato & Chicken with Basil, Thyme & Cheese
- 3 tbsp olive oil, extra virgin
- 3 tsp ground black pepper
- 3 tsp cayenne pepper
- 2 tsp ground ginger
- 1 salt
- 2 tbsp worcestershire sauce
- 2 tbsp HP sauce
- 1 tsp tabasco sauce
- 2 tsp garlic powder
- 1 kg chicken breasts
- 1/2 kg potato
- 1 dash basil
- 1 dash thyme
- 1/4 kg mozzerella cheese
- 1 bunch spring oinion
- 1 oregano
- Cube chicken and potato
- Mix all items except cheese and spring onion in large bowl as sauce
- Add chicken and potato to mix and let it marinate for 15 mins
- Pour mixture into baking dish and bake till golden brown (15mins)
- Slice spring onion into small pieces and spread on top
- Grate mozzerella cheese and spread on top
- Continue baking for another 10 mins till cheese melts
- Add oregano as needed for taste
