Mabel's Vegetable Minestrone Soup Recipe
- 1 onion diced
- 1 clove garlic, chopped
- 2 tbsp. extra virgin olive oil
- 3/4 pound beef, 1/2 inch cubes
- 2 (14 ounce.) cans beef broth
- 2 1/4 c. water
- 1 teaspoon Italian seasoning
- 1 1/2 c. liquid removed shelled beans (red, pink, pinto or possibly kidney)
- 1 (16 ounce.) can tomatoes, cut up
- 2 carrots, sliced
- 1 med. potato, diced
- 1/2 pkg. (10 ounce.) frzn leaf spinach, opt.
- 1 1/2 ounce. fine noodles or possibly spaghetti
- Saute/fry onion and garlic in oil till onion is tender.
- Add in beef cubes, stir to coat with oil.
- Add in beef broth, water and Italian seasoning.
- Cover and simmer 1 hour.
- Add in beans, tomatoes, carrots and potato, simmer 20 min.
- Stir in spinach (optional) and noodles and simmer 10 more min.
- Yields 8 to 10.
