Portabella Burger
- 4 tablespoons extra virgin olive oil
- 4 portabella mushrooms
- 4 hamburger buns
- 2 12 ounces ricotta cheese
- 4 pieces sun-dried tomatoes, shredded
- 3 basil leaves
- salt & freshly ground black pepper
- Heat the broiler to high.
- Pour 1 tbsp oil over each mushroom, then season.
- Broil for 7 minutes, then turn over and broil for a further 2 minutes.
- Split the buns and broil the cut sides.
- Spread one of the broiled sides of each bun with ricotta and sprinkle with sun-dried tomato.
- Top with a mushroom, basil and a bun lid.
