Tex Mex Turkey Sloppy Joes
- 1 Tablespoon Olive Oil
- 1 whole Onion, Diced
- 5 cloves Garlic, Minced
- 1 pound Ground Turkey Breast
- 1 can 15 Oz Can, Tomato Sauce, No Salt Added
- 1 can (4 Oz. Can) Diced Green Chilis
- 1 cup Chicken Stock (low Sodium)
- 1 teaspoon EACH: Pepper, Garlic Salt, Garlic Powder, Smoked Paprika
- 1 Tablespoon Chili Powder
- 2 dashes Hot Sauce
- 2 whole Carrots, Diced
- 2 stalks Celery, Diced
- 1 whole Orange Bell Pepper, Stem And Seeds Removed, Diced
- 1 whole Avocado (peeled, Pitted And Sliced)
- 1/2 cups Purple Onion, Sliced
- 1 cup Pickled Jalapeno Slices
- 8 whole Whole Wheat Buns, Toasted
- In a large cast iron skillet, over medium high heat add oil, onions, and garlic.
- Let the mixture bloom 2 minutes.
- Add in ground turkey, and cook until browned.
- Once browned add in tomato sauce, green chilies, chicken stock, and add in all spices (pepper through chili powder).
- Taste and adjust seasoning as needed.
- Add in a few shakes hot sauce if desired.
- Stir well to combine.
- Cover, and simmer for 10 minutes.
- Now add in carrots, celery, and orange pepper.
- Let this come to a simmer and simmer for another 15 minutes, or until liquid is pretty much absorbed.
- To serve: If desired toast buns.
- Add turkey mixture to bottom half of bun, top with diced purple onions, avocado slices, and pickled jalapenos.
- Place top half of bun on sandwich and enjoy!
