Pancakes with Cinnamon-Cheese Stuffing

• 1 cup POLLY-O Natural Part Skim Ricotta Cheese
• 1 Tbsp. sugar
• 1 tsp. ground cinnamon
• 4 frozen pancakes (4 inch), toasted

1. Mix ricotta cheese, sugar and cinnamon until well blended.
2. Spoon evenly over pancakes.
3. Fold pancakes over filling to enclose.
