Black Bean Chili Salad Recipe
- 1 (12 ounce.) pkg. black beans
- 2 c. minced onion
- 12 cloves minced garlic
- 2 (20 ounce.) cans whole tomatoes, minced, undrained
- 1 pound grnd beef
- 1 green pepper, minced
- 2 tbsp. chili pwdr
- 1 1/2 tbsp. grnd cumin
- 1/8 teaspoon crushed red pepper
- 1 c. grated Cheddar cheese
- In large cast-iron pot, put in black beans and cover with water.
- Bring to a boil.
- Turn off heat and let set at least 4 hrs.
- Turn on heat, add in 1 1/2 c. onion and 8 cloves garlic.
- Simmer till beans are tender.
- Drain liquid from beans.
- Add in tomatoes to beans and cook on low heat.
- While beans are cooking, brown grnd beef in skillet with remaining onions, green pepper, garlic, chili pwdr, cumin and red pepper.
- Drain off all fat and add in to beans and tomatoes.
- Heat thoroughly and serve topped with grated cheese.
- Serves 8.
