No-Cook Light Apricot Jam - CERTO Light Crystals

  1. Chop unpeeled apricots finely.
  2. Measure exactly 4 cups prepared apricots into large saucepan.
  3. Add lemon juice.
  4. Combine 1/4 cup sugar and pectin crystals.
  5. Gradually add to fruit mixture, stirring after each addition until well blended.
  6. Let stand 30 min., stirring occasionally.
  7. Add remaining sugar; stir 3 min.
  8. or until most the sugar is dissolved and no longer grainy.
  9. (A few sugar crystals may remain.)
  10. Fill all containers immediately to within 1/2 inch of tops.
  11. Wipe off top edges of containers; immediately cover with lids.
  12. Let stand at room temperature 24 hours or until set.
