No-Cook Light Apricot Jam - CERTO Light Crystals
- 4 cups prepared apricots (buy about 2 lb./900 g apricots)
- 2 Tbsp. lemon juice
- 3-1/4 cups sugar, divided
- 1 box Certo Light Pectin Crystals
- Chop unpeeled apricots finely.
- Measure exactly 4 cups prepared apricots into large saucepan.
- Add lemon juice.
- Combine 1/4 cup sugar and pectin crystals.
- Gradually add to fruit mixture, stirring after each addition until well blended.
- Let stand 30 min., stirring occasionally.
- Add remaining sugar; stir 3 min.
- or until most the sugar is dissolved and no longer grainy.
- (A few sugar crystals may remain.)
- Fill all containers immediately to within 1/2 inch of tops.
- Wipe off top edges of containers; immediately cover with lids.
- Let stand at room temperature 24 hours or until set.
