Gluten Free Cheddar and Green Onion Biscuits
- 2 cups Flour Mix *(see Recipe For Mix Below)
- 1 teaspoon Guar Gum
- 1 teaspoon Salt
- 4 teaspoons Baking Powder
- 1/4 cups Cold Butter, Cut Into Cubes
- 3/4 cups Milk
- 4 whole Green Onions, diced
- 1/2 cups Shredded Cheddar Cheese
- 1/4 cups Butter
- 1 clove Garlic, Minced
- 2- 1/2 cups Starch (I Use Equal Parts Potato And Tapioca Starch)
- 1/2 cups Sorghum Flour
- 1/2 cups Brown Rice Flour
- 1/2 cups Almond Meal
- In a large bowl mix together the flour mix, guar gum, salt, and baking powder.
- Cut in the butter until you have small pea sized pieces.
- Pour in the milk, add the green onions and cheddar cheese.
- Stir until the dough comes together and is all incorporated.
- It will be sticky.
- Pile the dough onto a non stick or greased cookie sheet.
- Form dough into a rectangle and roll out to about 1 1/2 inches thick.
- Sometimes its easiest to use wet hands to do this.
- Divide into 6 large square biscuits and move the biscuits to evenly space them on the prepared cookie sheet, about 2-3 inches apart.
- Bake in a 375 degrees preheated oven for 10-12 minutes until the tops just start to become golden.
- **Optional If you would like a bit more kick (Red Lobster flavor) to your biscuit, in a small saucepan add the butter and garlic and heat over very low heat while you assemble your biscuits.
- Just before you put them in the oven brush the tops of each biscuit with garlic butter then bake.
- Flour mix: Mix together all ingredients and store in an air tight container for use in all your gluten free baking needs.
