Chocolate brownies

  1. Melt together the butter and the chocolate, this can be done either on a double boiler or in the microwave - stir often to stop burning.
  2. Once complete set aside to cool.
  3. In a seperate bowl beat together the sugar and eggs until light and fluffy - its hard work but totally worth it.
  4. Once the chocolate mixture is coolish, combine with the egg and sugar mix.
  5. Beware - if the chocolate is too hot it will start to cook the eggs :(
  6. If using cornflour: Add a little water to the cornflour to make into a paste
  7. Add the flour/cornflour and cocoa to the mixture and stir gently until its all combined.
  8. Pour into a baking tray (30x15cm / 12x6inch).
  9. If the tray is a different size don't worry, you will just have fatter/thinner brownies.
  10. Bake at 180C/350F for about 40 minutes.
  11. Check after 30 mins and then every 5 mins after until they look cooked.
