- 1 green papaya, medium-size, grated
- 1 red pepper, sliced in strips
- 1 green pepper, sliced in strips
- 1 small carrot, sliced in strips
- 1 small ginger, cut in strips
- 1 big onion, peeled and sliced
- 3 tbsp rock salt
- 3 cup vinegar
- 1 1/2 cup sugar
- 2 tsp salt
- Squeeze all the vegetables in rock salt.
- Let stand for 1 hour then press out liquid.
- Place all the vegetables in a bowl or sterilized jar.
- Combine vinegar, salt and sugar and cook over medium heat til boiling.
- Remove scum.
- Let it boil for another 2-3 minutes then pour into container with vegetables.
- Note: If achara is to be stored, seal container immediately.
