  1. Squeeze all the vegetables in rock salt.
  2. Let stand for 1 hour then press out liquid.
  3. Place all the vegetables in a bowl or sterilized jar.
  4. Combine vinegar, salt and sugar and cook over medium heat til boiling.
  5. Remove scum.
  6. Let it boil for another 2-3 minutes then pour into container with vegetables.
  7. Note: If achara is to be stored, seal container immediately.
