Artichoke Frittata
- 5 whole Artichokes
- 1/2 whole Lemon, Juiced
- 3 whole Eggs
- 1 pinch Salt
- 2 loaves Bread
- 1/4 cups Parmesan Cheese
- 1/4 cups Parsley
- 2 Tablespoons Olive Oil
- Eliminate the external leaves from your artichokes and cut them into smallish pieces.
- Put them in a bowl with water and the juice of half a lemon.
- In another bowl, beat the eggs with a pinch of salt.
- Soak the bread in water.
- Once soft, squeeze it and break it into small pieces into the eggs.
- (2 loaves of Italian bread are about 200 grams.)
- Add the grated Parmesan cheese and chopped parsley, then add the artichokes and mix all the ingredients together.
- With some olive oil, grease a pan and pour in the mixture.
- Bake at 180 C for about 30-40 minutes.
