Veal Scallopini With Mushrooms Recipe

  1. Use large saucepan.
  2. Place in extra virgin olive oil and onion.
  3. On medium-high heat, cook onion approximately 10 min, stirring frequently.
  4. Onions will turn glassy.
  5. Add in veal, salt, pepper, thyme, and 2 ounces vermouth.
  6. Cook about 10 min.
  7. Reduce heat to medium and cook an additional 20 min.
  8. While cooking, add in the remaining 2 ounces of vermouth.
  9. Stir frequently.
  10. Then add in the mushrooms, returning heat to medium-high.
  11. Cook 6 min, stirring often.
  12. Remove and serve over rice.
  13. NOTE: Total cooking time is approximately 46 min.
  14. Makes 4-6 servings.
