Hot-Oven Garlic Heads

  1. HEAT the oven to 450F.
  2. SLICE off the stem of the garlic, revealing the tops of the cloves.
  3. Place the garlic on a sheet of aluminum foil large enough to seal around the heads.
  4. Drizzle with oil and sprinkle lightly with bottled smoke.
  5. SEAL the packet and bake for 45 minutes to 1 hour.
  6. The garlic is cooked when golden brown and very tender.
  7. When the heads are cool enough to handle, Squeeze the soft garlic paste out of the papery skin into a small bowl.
  8. Season with salt to taste.
