Hot-Oven Garlic Heads
- 2 whole garlic heads
- Olive oil
- Bottled smoke
- Kosher salt
- HEAT the oven to 450F.
- SLICE off the stem of the garlic, revealing the tops of the cloves.
- Place the garlic on a sheet of aluminum foil large enough to seal around the heads.
- Drizzle with oil and sprinkle lightly with bottled smoke.
- SEAL the packet and bake for 45 minutes to 1 hour.
- The garlic is cooked when golden brown and very tender.
- When the heads are cool enough to handle, Squeeze the soft garlic paste out of the papery skin into a small bowl.
- Season with salt to taste.
