Bacon Stuffed French Toast
- 96 slices OSCAR MAYER 18-22 Slice Count Raw Bacon Flat Pak Rite Aid 2 For $7.00 thru 02/06
- 1/2 cup cinnamon sugar, divided
- 96 each Texas toast slices
- 96 each eggs
- 1-1/2 qt. milk
- 2 cups powdered sugar
- 1-1/2 qt. maple-flavored or pancake syrup
- Place bacon in single layer on parchment paper-covered pans; sprinkle evenly with 1/4 cup of the cinnamon sugar (or use 1/4 tsp.
- of the cinnamon sugar for trial recipe).
- Bake in a preheated 350F-convection oven for 8 to 10 minutes or until bacon is crisp; drain.
- Cut slit in side of each toast slice to form pocket, using a serrated knife.
- Fill each pocket with 2 of the bacon slices; set aside.
- Beat eggs, milk and remaining 1/4 cup cinnamon sugar (or 1/4 tsp.
- cinnamon sugar for trial recipe) with wire whisk until well blended.
- Dip toast slices in egg mixture, turning over to evenly coat both sides.
- Cook on 350F-griddle for 2 to 3 minutes on each side or until golden brown on both sides.
- Sprinkle with powdered sugar.
- Serve with syrup.
