Bacon Stuffed French Toast

  1. Place bacon in single layer on parchment paper-covered pans; sprinkle evenly with 1/4 cup of the cinnamon sugar (or use 1/4 tsp.
  2. of the cinnamon sugar for trial recipe).
  3. Bake in a preheated 350F-convection oven for 8 to 10 minutes or until bacon is crisp; drain.
  4. Cut slit in side of each toast slice to form pocket, using a serrated knife.
  5. Fill each pocket with 2 of the bacon slices; set aside.
  6. Beat eggs, milk and remaining 1/4 cup cinnamon sugar (or 1/4 tsp.
  7. cinnamon sugar for trial recipe) with wire whisk until well blended.
  8. Dip toast slices in egg mixture, turning over to evenly coat both sides.
  9. Cook on 350F-griddle for 2 to 3 minutes on each side or until golden brown on both sides.
  10. Sprinkle with powdered sugar.
  11. Serve with syrup.
