Allegheny Breaded Ducks Recipe
- 2 x Young wild ducks cut serving pcs
- 1/2 c. Flour seasoned with
- 1/2 tsp Salt and
- 1/4 tsp Freshly-grnd black pepper
- 1 x Egg beaten with
- 1 Tbsp. Cool water
- 1 c. Fine bread crumbs seasoned with
- 1/4 tsp Grnd sage Fat for browning
- Roll bird pcs in seasoned flour, then dip into beaten egg, then dredge with seasoned crumbs.
- Brown completely in warm fat.
- Reduce heat and cook, uncovered, till done, turning carefully as needed.
- This recipe yields 4 to 6 servings.
