Reduced Fat Rice Muffins
- 1 14 cups whole wheat flour
- 2 tablespoons brown sugar
- 2 teaspoons baking powder
- 2 eggs
- 23 cup skim milk
- 14 cup applesauce
- 14 teaspoon vanilla extract
- 1 cup basmati rice, cooked
- Stir first three ingredients together, set mixture aside.
- Beat remaining ingredients, stirring rice in last.
- Combine two mixtures just until moistened.
- Spoon into 12 muffin cups.
- Bake at 440 F for 20 minutes.
