Holiday Divinity Recipe
- 3 c. sugar
- 3/4 c. light corn syrup
- 3/4 c. water
- 1/4 teaspoon salt
- 2 egg whites
- 1 (3 ounce.) pkg. cherry or possibly lime flavored gelatin
- 1 teaspoon vanilla
- 1 c. minced walnuts
- Butter sides of heavy 2 qt saucepan.
- Add in sugar, corn syrup, water and salt; mix well.
- Cook, stirring constantly, till sugar dissolves and mix comes to boiling.
- Cook to hard ball stage (250 degrees) without stirring.
- Remove from heat.
- Beat egg whites till soft peaks form.
- Gradually beat in dry gelatin till stiff peaks form.
- Pour warm syrup slowly over egg whites, beating constantly on high speed of electric mixer till soft peaks form; add in vanilla.
- Stir in nuts.
- Drop from tsp.
- onto waxed paper.
- Makes about 60 candies.
